"Self-hosted" gets used for two different things, and the confusion wastes hours. Sometimes it means software you download and run. Sometimes it means a machine that sits in your building. This post takes the practitioner reading: you want to install it and keep it running.
What is the difference between self-hosted and on-premises AI?
Self-hosted means you are the operator. You choose the hardware, install the software, configure it, update it, and fix it when it breaks. On-premises only means the hardware lives at your site, and somebody else may have built and configured it before it arrived. Every self-hosted setup is on-premises. Not every on-premises setup is self-hosted.
The difference is a list of jobs. Self-hosting hands you five: hardware selection, installation, configuration, updates, troubleshooting. An appliance hands you one, which is plugging it in and having someone to call.

Ollama is the foundation under most of this. It downloads open weight models, runs them on your GPU or CPU, and exposes a local API. On its own it gives you a terminal and nothing else, which is why people pair it with a frontend, covered in Ollama desktop app options.

Open WebUI is the closest thing here to a classic self-hosted web app: Docker, pointed at your Ollama instance, giving a browser interface with user accounts. Does a desktop app like InnerZero count as self-hosting?
Yes. Self-hosting is about where the software runs and who controls it, not about whether a server rack is involved. When does a vendor appliance beat doing it yourself?

Three questions settle it. Who fixes it at two in the morning? Who signs off the security review? How many people share it, and does each need their own login and data boundary? If the first two answers are "me, and I do not mind", self-hosting is fine. If either is "nobody currently", an appliance with a support contract is buying you a person as much as a machine.
The reverse case matters just as much. For an individual, a small business, or a professional who wants private AI for their own work, buying enterprise hardware is a large solution to a small problem. Can I self-host an AI chatbot without a GPU?
Yes. Every route in the table runs on CPU only, just more slowly. A model in the 1B to 4B range is comfortable on a modern CPU with 16 GB of RAM and answers at reading pace rather than typing pace. Do I need Docker to self-host a chatbot?
No. Docker is only needed for the web-app routes such as Open WebUI. Desktop applications install like any other program, and Ollama and LM Studio ship native installers. Skip that row and you lose only multi-user access.
Is self-hosting the same as running an AI chatbot offline?
They usually go together but are not identical. Self-hosting is about who operates the software. Offline is about whether it needs the internet at runtime. A self-hosted tool can still call out for web search or updates. The test is to disconnect the network and see whether chat, history and memory still work.
Can I self-host on a spare machine and use it from my laptop?
